Erythritol is a plant-based non-carbohydrate sweetener that is classified as a sugar alcohol in the same way as xylitol and sorbitol. This natural sweetener is found in some mushrooms, in pumpkin, melon, grapes, pears and in some foods and drinks after the fermentation process - in wine, beer, cheese, soy sauce and others. Industrially, erythritol is obtained by fermentation of yeast from plants with a high starch content - corn, tapioca, etc. It has about 70% of the sweetening power of regular sugar. It can be used as a substitute for cane sugar, beet sugar or other sweeteners. This sweet-tasting substance was discovered in 1848 by Scottish chemist John Stenhouse. In 1993, erythritol began to be used in Japan and later in the rest of the world. Erythritol has a crystalline structure and leaves a cooling sensation when dissolved in the mouth. It has zero glycemic index. This product is quickly absorbed in the small intestine, but is not absorbed by the body and is excreted naturally in the urine. Unlike other sweeteners, it has no effect on the intestinal microflora, does not cause bloating and other unpleasant symptoms.
How the use of erythritol affects the body
- Like other sugar alcohols, it is not a breeding ground for pathogenic bacteria, thus it does not contribute to caries. On the contrary, it has a healing effect, helping to limit the carious focus and the partial remineralization of tooth enamel;
- It is considered an antioxidant and has the ability to absorb free radicals;
- Unlike xylitol and sorbitol, it does not cause a laxative effect, but the recommended doses should not be exceeded;
- Does not affect blood sugar and insulin levels;
- Does not damage blood vessels and does not contribute to the occurrence of inflammatory processes;
- Does not affect weight gain;
- Does not damage the work of the gastrointestinal tract;
- It is not addictive.
Application
Erythritol is widely used in the food and cosmetic industries and in medicine. It is added to chewing gums and toothpastes. It can be used to sweeten tea or coffee, as well as added to sour milks or handmade cakes, cookies and other desserts.
It is not suitable for making jams and marmalades, as it has no preservative properties.
