Rosemary honey is used as a valuable ingredient in our cuisine, made from multi-colored honey infused with rosemary.
It is a type of honey made mostly from flower nectar combined with rosemary pollen. There are several species of the plant, but Rosmarinus officinalis is the most common. Rosemary usually blooms in the spring, often early, but in warmer climates it can bloom throughout the summer and into fall, as long as the weather is favorable. The flowers can be purple, blue, pink or white and provide a fragrant nectar source for honey bees to use.
The final product is different from real honey, which is made by bees from the nectar of the flower. Today, rosemary is recommended for dizziness and low blood pressure, stress and nervous tension, general exhaustion and sexual weakness. A decoction of leaves stimulates the work of the stomach and intestines.
Rosemary honey is typical of Mediterranean regions, mainly France and Spain. Its unique taste distinguishes it from other types of honey. But the production is rarely the same, as much depends on whether the conditions are late winter and early spring.
