Chicory paste is a concentrated extract from the root of the plant, intended for making a healthy alternative to coffee, as well as for adding flavor, color, and density to meat and dairy products, sauces, and desserts.

The beneficial properties of chicory have long been known. In ancient Egypt and Rome, it was used as a medicine, and later to improve the taste of various dishes. A little later, Catholic monks in Europe developed a tonic drink prepared by roasting and grinding chicory roots grown in monastery courtyards, then soaking the mixture in hot water. According to one version, chicory began to be used as a coffee substitute in the early 19th century, during a sharp rise in raw material prices in Europe. According to another theory, the use of chicory instead of coffee coincided with the great migration of Europeans to America.
The beneficial properties of this plant are due to its composition, primarily inulin - a polysaccharide that gives chicory its sweet taste.
Inulin maintains normal blood sugar levels and can serve as a harmless sweetener when carbohydrate intake needs to be limited. It is necessary to maintain a constant composition of the intestinal microflora. Inulin activates the proliferation of beneficial bacteria, protects the body from harmful microorganisms, which improves digestion, strengthens the immune system, etc.
The production of chicory paste goes through several production steps that preserve its beneficial composition. Chicory roots are roasted and then soaked in hot water to extract their soluble components. The liquid extract is filtered and all insoluble solids are removed from it. The resulting filtered liquid is processed in an evaporator, which removes the water and concentrates the remaining substances into a thick paste.
