This stock is made by simmering bird bones with onions, carrots, celery, leeks, garlic and sea salt. The protein collagen contained in the bones passes into the water and a valuable, rich in taste and aroma, opaque bone broth is obtained. Collagen is the basis of the body's connective tissue, which provides its strength and elasticity. Bone broth is widely used as a nutritious base for soups, sauces, risottos and other dishes. This Mattisson product is in concentrated form and must be diluted with water if direct use is desired.
