Asafetida is the dried oleoresin resin separated from the rhizome or main root of the Ferula plant, a perennial herb 1 to 1.5 m tall. The plant is native to the deserts of Iran and the mountains of Afghanistan, but it is cultivated mainly in India. It has a strong pungent odor and bitter taste and is used in a number of Ayurvedic preparations. Its characteristic smell and taste are the reason for its other name "devil's manure".
